Original with Clams & Chorizo (Serves: 4)
Enjoy with a glass of Crispin and some of your favorite bread.
Ingredients
- 2 tbsp Olive Oil
- 1 Spanish Onion (chopped fine)
- 2 Garlic Cloves (chopped fine)
- 2 Dried Chorizo (chopped fine)
- 2 Ripened Tomatoes (chopped fine)
- 2 tbsp Sherry Vinegar
- 2.5 lbs Clams (soak them in cold water for 15 minutes or so)
- 1.5 cups Crispin Original Cider
- .25 cups Loosely packed parsley, chopped coarsely
Preparation
- Heat oil in a large casserole dish over med-high heat.
- Add onion & garlic, saute until soft and starting to color (5-7 minutes).
- Add Chorizo and stir occasionally until its colored (might take 5 minutes or so).
- Add the tomato and cook until it's a little thickened (maybe another 5 minutes or so).
- Add in the vinegar next and stir. Drain the water the clams are in, rinse them, then add them into the casserole dish.
- Next is the most important part. Add in the Crispin Original Cider! Cover and cook, shake the pan occasionally until the clams open (5 minutes or so).
- Stir the parsley in, and serve it hot.
