So rare it should be in a bank. Clyde is the guy you handcuff to the bed. Or the prison bars.

Apple-Wine: An unfiltered cider containing both Heirloom apple-wine base (66%) and classic Colfax base unfiltered apple-wine (33%) and the Heirloom apple-wine has been aged in stainless steel tanks for 5 months, and then in oak barrels previously used for Chardonnay wine for 4 weeks.

Apple blend: Heirloom cider apple blend is; 73% Yarlington Mill,13% Ellis Bitter,8% Chisel Jersey,4% Dabinett, 2% Harry Masters Jersey.

Flavor: Clyde is a powerful, brooding cider. This unfiltered cider has a golden, opaque presentation. The nose is strongly influenced by the Heirloom apple blend as well as the yeasts that were preserved in the final product. The first taste of the product is the consumers first introduction to the organic maple syrup and organic honey that are used to smooth the cider. This quickly gives way to the heart of the product, raw fermented heirloom cider apples. Oak and vanilla notes from the barrel aging and a tight tannin feel from the heirloom apples complement the herbal and yeasty elements of the base apple wine. The finish contains a touch of sweetness mixed with the lingering tannins. Ph: 3.85. Ending specific gravity: 1.016.

Apple-Wine: An unfiltered cider containing both Heirloom apple-wine base (50%) and classic Colfax base unfiltered apple-wine (50%) and the Heirloom apple-wine has been aged in stainless steel tanks for 5 months, and then in oak barrels previously used for Chardonnay for 4 weeks.

Apple blend: Heirloom cider apple blend is; 73% Yarlington Mill,13% Ellis Bitter,8% Chisel Jersey,4% Dabinett, 2% Harry Masters Jersey.

Tasting notes: The color is a vibrant, a bold redhead that looks exquisite beside Clyde. The nose is of ginger with yeasty note. The first taste is of black currant which is then joined by the ginger to create a taste reminiscent of blood orange. The tannins vanilla notes should be attributed to the oak used in aging. SG is 1.018 and PH is 3.6.
